Impossible Apricot Cake

It shouldn’t work but it does…

1 Cup of Sugar

1 Cup of All Purpose Flour

1/2 Cup Melted Butter

2 Eggs

1 Tsp Almond Extract

3/4 Cup Chopped Apricots (or more to taste)

1/2 Cup Blueberries


Grease and Flour Pan

Scatter Fruit on Bottom of Pan

Mix 1st 5 Ingredients until Fully Combined

Pour Batter over Fruit

Sprinkle top with Sugar as Desired.


Bake at 350 Degrees Fahrenheit for 45 min.
